Lemon Curd & Honey Ice Cream With Gingersnap Cookie Crumble

Making individual pear crisps.

Individual Pear Crisps (my own quick recipe).

Recipe (makes approximately two small crisps):

Peel and slice two ripe anjou pears.  Toss with lemon juice, cinnamon and a little bit of brown sugar.  Arrange neatly in two ramekins.

For the topping:  Mix cold, cubed unsalted butter with quick oats, brown sugar, a little bit of whole wheat flour and cinnamon.  Top ramekins with mixture.  Bake at 350 degrees for 20 minutes or until topping is brown and bubbly.

Tip: Place ramekins on a baking sheet for ease when getting them in and out of the oven!
